Tagliatelle mit gebratenen Tomaten, Burrata und Zitronenbasilikum

Pasta mit frischen Tomaten - immer eine gute Idee!
Zutaten für 4 Personen:

       Für die Tagliatelle:

  • 4 kleine Burrata
  • 400 g Tagliatelle
  • 500 g kleine, frische und aromatische Tomaten
  • 200 ml Kochsahne
  • 3 Knoblauchzehen
  • 2 EL Olivenöl
  • 1 TL brauner Zucker
  • Salz und frisch gemahlener, schwarzer Pfeffer
  • 1 Bund Zitronenbasilikum

        Für die Dekoration:

  • Basilikumblüten
Zubereitung:

Die Tagliatelle nach Packungsanweisung im Salzwasser al dente kochen.

Die Tomaten waschen und trocknen und am besten nicht schneiden, sondern ganz lassen. Sollten sie etwas größer sein, dann halbieren oder vierteln. Den Knoblauch schälen und in feine Streifen schneiden.

In einer großen Pfanne das Olivenöl erhitzen. Den Zucker darin auflösen. Knoblauch hinzufügen und unter Rühren leicht karamellisieren. Die Tomaten hinzufügen. Bei mittlerer Hitze so lange schmoren bis die Tomaten schrumpeln und ihre Haut aufplatzt. Die Sahne unterrühren und einkochen lassen. Mit Salz und schwarzem Pfeffer würzen. Die Nudeln aus dem Wasser nehmen, in die Pfanne geben und mit der Tomaten Sauce vermischen. Sollte die Sauce zu fest sein, etwas Pasta Wasser hinzufügen. Die Pasta noch etwas stehen lassen, damit sich die Aromen gut miteinander vermischen.

Zitronenbasilikum waschen, trocken schütteln und die Blättchen abzupfen.

Die Tagliatelle und die Burrata auf Teller verteilen. Mit Zitronenbasilikum bestreuen und mit Basilikumblüten dekorieren.
