Zutaten für 4 Personen:
- 500 g reife, bunte, unterschiedlich große Tomaten
- 8 reife Feigen
- 4 kleine Burrata
- 1 Bund frisches Basilikum
- Olivenöl
- Balsamico Essig
- Salz und Pfeffer
Für aromatisierte Semmelbrösel:
- 50 g Semmelbrösel
- 1 kleine Knoblauchzehe
- Abgeriebene Zitronenschale
- Salz
Zubereitung:
Dieser Salat lebt von frischen und so richtig reifen Tomaten und Feigen. Die beste Jahreszeit um ihn zu genießen ist deshalb der Sommer!
Die Knoblauchzehe fein schneiden und mit etwas Salz zu einer Masse zerreiben. In einer Pfanne etwas Olivenöl erhitzen und die Semmelbrösel zusammen mit dem Knoblauch und dem Zitronenabrieb bei niedriger Hitze kurz rösten. Die Brösel sollten goldgelb und knusprig sein.
Die Tomaten waschen und trocken tupfen. Die großen Tomaten in Scheiben schneiden, die kleineren vierteln oder auch nur halbieren. Die Feigen waschen und vierteln. Tipp: Das Gemüse und die Früchte rechtzeitig vorher aus dem Kühlschrank nehmen. Die Aromen entfalten sich am besten bei Zimmertemperatur!
Die Tomaten und die Feigen auf Teller verteilen. Mit Salz und Pfeffer würzen und mit Olivenöl und Balsamico Essig beträufeln. Die Burrata aus der Packung nehmen und in die Mitte legen.
Unterschiedlich große Basilikum Blätter zupfen und sie auf den Salat legen. Mit den Semmelbröseln bestreuen.
