Salat mit Fenchel, Mango und Ziegenkäse

Mango und Ziegenkäse - die perfekte Kombination!
Zutaten für 4 Portionen:

        Für den Salat:

  • 4 kleine, frische Fenchelknollen
  • 2 frische, reife Mango
  • 300 g Ziegenfrischkäse
  • 3 kleine rote Zwiebeln
  • 100 g Mandelblättchen
  • 1 Bund Dill
  • 4 EL gutes, mildes Olivenöl
  • 2 EL Mango Essig
  • Salz und Pfeffer

        Für die Dekoration:

  • Kresse
  • 1 EL schwarze Sesamsamen
Zubereitung:

In einer Pfanne ohne Fett die Mandelblättchen goldgelb rösten.

Den Fenchel waschen, trockentupfen und in feine Ringe schneiden oder raspeln. Die Mangos waschen, schälen und in schmale Streifen schneiden. Die Zwiebeln schälen und in feine Streifen schneiden. Den Dill waschen, trocken schütteln und zerzupfen. Fenchel, Mango, Zwiebeln und Dill in einer Schüssel vermengen. Mit Salz und Pfeffer würzen und mit Olivenöl und Mango Essig abschmecken.

Den Salat auf die Teller verteilen. Den Ziegenkäse zerzupfen und auf dem Salat verteilen. Mit Mandelblättchen bestreuen. Mit Kresse und schwarzen Sesamsamen garnieren.
