Geschmacksexplosion auf den ersten Biss!
Zutaten für 4 Personen:
Für den Salat:
- 400 g Rucola Salat
- 8 Ziegenkäse Taler (Frischkäse)
- 16 Speckstreifen
- 2 mittlere rote Zwiebeln
- 8 frische, reife Aprikosen
- 4 Zweige Thymian
- 5 EL Olivenöl
- 3 EL Balsamico Essig
- Salz und frisch gemahlener, schwarzer Pfeffer
Für die Dekoration:
- Lavendelblüten
- Thymianblüten
Zubereitung:
Den Rucola waschen und trocken schütteln. Die harten Enden abschneiden und den Salat zerzupfen. Die Zwiebeln schälen und in feine Streifen schneiden. Den Rucola und die Zwiebeln in einer Salatschüssel vermengen, mit Salz und Pfeffer würzen und mit 4 EL Olivenöl und Balsamico Essig abschmecken.
Die Ziegenkäse Taler mit je zwei Streifen Speck so umwickeln, dass der Käse nicht auslaufen kann. In einer Pfanne das restliche Olivenöl erhitzen, die Thymianzweige dazu geben und den Ziegenkäse im Speckmantel darin von beiden Seiten braten bis der Speck kross ist. Der Käse sollte dabei nicht auslaufen.
Die Aprikosen waschen, trocknen und in Scheiben schneiden.
Den Salat auf Teller verteilen, mit Aprikosenscheiben und dem gebratenen, noch warmen Ziegenkäse belegen. Mit Lavendel- und Thymianblüten dekorieren.
