Zutaten für 4 Personen:
Für das Püree:
- 300 g mehlige Kartoffeln
- 400 g Sellerie
- 40 g Butter
- 200 ml Milch
- Salz, Pfeffer, Muskatnuss
Für die Shiitakepilze:
- 500 g Shiitakepilze
- 12 große Kapern
- 8 Kalamata Oliven
- 1 Granatapfel
- 2 Zweige frischer Thymian
- 4 Knoblauchzehen
- Olivenöl
Zubereitung:
Kartoffeln und Sellerie waschen und schälen, grob schneiden und im Salzwasser ca. 30 Minuten kochen. Sobald das Gemüse weich ist, das Wasser abgießen und stampfen. Milch und Butter dazu geben. Mit Salz, Pfeffer und frisch geriebenem Muskatnuss würzen und gut verrühren.
Den Knoblauch schälen und in feine Scheiben schneiden. In einer Pfanne Olivenöl erhitzen und die Knoblauchscheiben darin goldgelb braten. Den Knoblauch herausnehmen und auf Küchenpapier legen, damit das überschüssige Fett absorbiert wird.
Die Shiitakepilze putzen, eventuell die Stiele entfernen und die größeren Pilze halbieren bzw. in Scheiben schneiden. Im Olivenöl kurz und scharf anbraten und anschließend mit Salz und Pfeffer würzen.
Die Granatapfelkerne herauslösen. Die Thymian und Oregano Blättchen abzupfen.
Das Püree, die Shiitakepilze und die Granatapfelkerne auf Teller verteilen. Die gebratenen Knoblauchscheiben, die Kapern und die Oliven dazu geben. Mit Thymian und Oregano bestreuen und mit Olivenöl beträufeln
