Zutaten für 4 Personen:
- 8 Scheiben Bauernbrot
- 2 reife Auberginen
- 300 g Ricotta
- ½ Bund Thymian
- 2 große Knoblauchzehen
- 100 ml Olivenöl
- Salz und Pfeffer
Für die Dekoration:
- Lavendelblüten
- Frische Thymianzweige
Zubereitung:
Die Auberginen waschen, trocknen und längs in ca. 0,5 cm dicke Scheiben schneiden. Von beiden Seiten salzen und das Salz ca. 20 Minuten einwirken lassen, damit die Bitterstoffe austreten können. Anschließend die ausgetretene Flüssigkeit mit Küchenpapier abtrocknen.
Den Knoblauch schälen und in Scheiben schneiden. Die Thymianblättchen abzupfen.
In einer Pfanne ausreichend Olivenöl erhitzen. Die Auberginen darin von beiden Seiten ca. je 2 Minuten braten bis sie weich und goldgelb sind. Nach dem Wenden die Knoblauch Scheiben dazu geben und die Auberginen mit Thymianblättchen bestreuen und mit Pfeffer würzen.
Den Ricotta in einer Schüssel mit einer Gabel locker schlagen.
Die Brotscheiben mit Olivenöl bestreichen und in einer Pfanne rösten. Mit dem Ricotta bestreichen und mit Auberginenscheiben, dem gebratenen Knoblauch und gebratenen Thymianblättchen belegen. Mit Lavendelblüten und frischem Thymian dekorieren.
