Gegrillte, wilde Calamari mit Zucchini und Tomaten

Zutaten für 4 Personen:
  • 12 kleine, wilde Calamari
  • 4 mittelgroße , runde Zucchini
  • 300 g kleine, bunte Tomaten
  • 1 große Bio Zitrone
  • 2 große Knoblauchzehen
  • 1 Bund Zitronen Thymian
  • 2 Zweige Dill
  • Salz und Pfeffer

        Für die Marinade:

  • 100 ml Olivenöl
  • 1 Bio Zitrone
  • 1 Knoblauchzehe
  • Salz und Pfeffer
Zubereitung:

Die Zitrone auspressen. Die Knoblauchzehe fein hacken. Zitronensaft, Olivenöl, Knoblauch, Salz und Pfeffer zu einer Marinade verrühren und ca. 20 Minuten lang ziehen lassen.

Die Zucchini waschen, vierteln, salzen und pfeffern. Knoblauch und Zitrone in Scheiben schneiden. Die Tomaten waschen und trocken tupfen. Basilikum und Dill waschen, trocken tupfen und die Blättchen abzupfen.

Die Calamari waschen, trocken tupfen und das Fischbein herausziehen. Mit Olivenöl einreiben und entweder auf dem Grill oder in einer Grillpfanne von beiden Seiten je ca. 3 Minuten grillen. Die Zucchini Viertel gleichzeitig auf den Grill oder in die Grillpfanne legen und ca. 3 Minuten von beiden Seiten grillen bis die weich, aber noch bissfest sind. Nach dem ersten Wenden, die schon gegrillte Seite der Calamari und Zucchini reichlich mit der Marinade bestreichen.

Die Zitronen- und Knoblauchscheiben und die Tomaten ebenfalls kurz grillen oder in einer Pfanne mit Olivenöl braten.

Calamari, Zucchini, Tomaten, Knoblauch- und Zitronenscheiben auf Teller verteilen. Mit der restlichen Marinade beträufeln und mit Basilikum und Thymian dekorieren.
