Zutaten für 4 Personen:
- 2 kg festkochende, junge und kleine Kartoffeln
- 4 Eier
- 500 g Baby Blattspinat
- 4 Knoblauchzehen
- 1/2 Bund Thymian
- 1/2 Zitrone
- Olivenöl
- Chillisalz
- Rosa Beeren
- Salz und Pfeffer
Zubereitung:
Die Kartoffeln waschen und mit Schale im Salzwasser bissfest kochen. Den Knoblauch schälen und fein hacken.
Den Backofen auf 200 Grad vorheizen. Das Kartoffelwasser abgießen. Die Kartoffeln auf ein Backblech legen und mit einem Kartoffelstampfer leicht andrücken bis die Schale aufplatz. Mit Chilisalz, Pfeffer, der Hälfte des Knoblauchs und dem Thymian bestreuen und mit Olivenöl beträufeln. Ca. 20 Minuten lang im Ofen backen.
Den Spinat gut waschen und trocken schütteln. In einer großen Pfanne Olivenöl erhitzen und den Knoblauch darin andünsten. Den Spinat hinzufügen. Mit Salz, Pfeffer und einem Spritzer Zitrone würzen. Den Spinat so lange in der Pfanne dünsten bis er zusammengefallen ist.
In einer Pfanne mit etwas Öl die Spiegeleier braten. Salzen und Pfeffern.
Den Spinat auf die Teller verteilen. Darauf die Kartoffeln und die Spiegeleier legen. Mit Rosa Beeren und dem restlichen Thymian dekorieren.
