Avocado-Gurken Gazpacho

Zubereitungszeit: 80 Minuten   |  Schwierigkeit: einfach   |  Kosten pro Portion: ca. 2,50 €

Zutaten für 4 Personen:
  • 2 Avocados
  • 1 große frische Schlangengurke
  • 1 große Zwiebel
  • 2 bis 3 Knoblauchzehen
  • 1 grüne Chilischote
  • 300 ml Gemüsebrühe
  • 300 ml griechischer Joghurt
  • Salz und Pfeffer

       Zur Dekoration:

  • 1 Minigurke
  • Sesamsamen
  • Essbare Blüten
Zubereitung:

Die Schlangengurke schälen und klein schneiden. Die Avocados entkernen,  von Haut befreien und grob würfeln. Die Zwiebel und den Knoblauch schälen und hacken. Den Knoblauch anschließend zusammen mit ein wenig Salz zu einer Masse zerdrücken. Die Chilischote klein hacken.

Schlangengurke, Avocado, Zwiebel, Knoblauch, Chili, Brühe und Joghurt mixen bis die Gazpacho samtig und glatt ist. Mit Salz und Pfeffer abschmecken. Wer es gerne spicy mag, kann etwas mehr von der grünen Chilischote dazu geben. Anschließend für 1 Stunde in den Kühlschrank stellen.

Die Minigurke nicht schälen und in sehr feine Scheiben schneiden.

Die Gazpacho auf Teller verteilen. Mit Gurken Scheiben, Sesam Samen und Blüten dekorieren.
